Today we had a Tea at our church for our Women’s Ministry. It was so beautiful and fun. One item that I made was chicken salad for sandwiches. This was such a yummy dish in itself, but that is not what this post is about. The bread that we used for the sandwich was the Pepperidge Farm Swirl Raisin Cinnamon Bread.
It was such a nice sweet bread with the savory chicken salad. When we were done making the heart shaped little sandwiches, there was tons of bread crusts and pieces leftover. I thought about collecting the pieces to feed my chickens. But, my friend suggested that I use it for bread pudding. I believe that I have made bread pudding one other time. But it had been awhile. So, I took three bags of crusts and little pieces to try my hand at the bread pudding.
I used a recipe from BettyCrocker.com. It used a half cup of sugar, two eggs, 6 cups of the bread cubes, cinnamon, nutmeg, two cups of milk and 1/4 cup of butter or margarine. You cook the milk and butter in a saucepan until the butter is melted. Then, in a separate bowl, you mix the eggs, sugar, nutmeg and cinnamon. Then you add the bread pieces and stir it with the milk and butter . You put it all together in a baking dish and bake at 350 degrees for about 40-45 minutes. You know it is done when a knife inserted comes out clean.
My kids and husband LOVED this! We put cool whip on top and it was so yummy. So frugal win for using up scraps that would have went in the trash or to the chickens!!
