$5 or Less Dinner- Quiche

I wanted to start writing down some of the frugal meals that I make. I can usually feed our family of 4 for about $5 or less per night. This includes 1 adult man, 1 adult woman, one 13 year old boy and one 8 year old girl. All healthy eaters and no food allergies. We have tried to teach our children to eat or at least try what we have and they are typically pretty good. They each have a couple items that they do not care for. But they will mostly eat what they are presented.

We eat a lot of different dishes and I try to get good deals on food. I usually shop at the military commissary or Walmart. I do love Walmart Pick Up Service. But, my frugal nature has a hard time paying more for items when I know I can get them cheaper at the commissary. I also pick up other items around town. I watch the loss leaders at Safeway. I shop at Walgreens when there are really good deals. I also shop at the bread store when I am up that way. I will try to post about the bread outlet in a future article.

Last night, I made quiche. Quiche is a very easy and fast dish to make. You can put a little of this and a little of that in it to make a meal. I had a few items on hand including some veggies, lunch meat and a little bit of cheese. I also had two pre-made pie crusts. Although, I have made the crusts from scratch as well.

Here is how I made the Quiche, you can adapt it with ingredients you have on hand:

Quiche- $5.00 Meal


1/2 Cup of Milk

12 Eggs

1/2 cup of veggies such as onions, spinach, swiss chard, garlic, green onions, basil

1/4 cup of chopped up ham or lunch meat

1/4 cup of cheese (or more if you are like us)

1 Pie Crust

Salt, pepper, or spices to taste

To Make:

  1. Roll out the pie crust into a pie pan.
  2. Combine all of the ingredients above. Mix around and put them in the crust.
  3. Place the the quiche on a baking pan, in case it spills, and bake at 350 degrees for about 40 min. Check at this point and see if the eggs are firm. If they are not, bake for 10 additional minutes until cooked through.
  4. Let cool for 5 min or so before slicing.

We had this with fruit.

The cost for this is less than $5.00 with the pie crust at about $1.00, eggs I got at Walgreens for about $1.40, cheese, meat and veggies, maybe a dollar and I had them on hand from other items. Milk cost was maybe $.30. So, under $5.00 total. The kids ate it as did my husband and it was gone!
