$5 or Less Dinner for Four- Delicious Roasted Pork, Rice, and Zucchini

Today I wanted to share a very inexpensive and tasty meal that I made last night. It was under $5.

This dinner fed my family of four and we had some leftovers. I have a preteen girl and a teen boy and it was plenty for all of us.

I was lucky to find a bunch of pork roasts at the commissary in the mark down bin about a month ago. I purchased several of them and froze them. As you can see, they were marked down to $3.45. These are already seasoned. This one had a mustard seasoning on it.

To cook the pork roast, I wanted to use my pressure cooker. This pressure cooker is called a

Since the pork roast already had seasoning on it. I didn’t have to add much. I just put some onions in the bottom of the pot and put the pork roast on top. Then. I poured about 3/4 of a cup of water on top. Finally, I closed the pressure cooker and set it to the pressure cooker setting. Then I set it for 105 minutes.

Next, I made some rice to go with the dinner. I cook my rice in a rice cooker that I got at a thrift shop a long time ago.

Then, I cut up another onion and some zucchini from my garden. I made a double batch so that I could freeze some. I am working through a pile of squash and zuchinni that came from the garden.

I put a little oil and some seasoning on the zuchinni. I cooked it for about 30 minutes.

Here is the end result! I think this was a great and filling meal for less than $5.

Always look in the markdown bins, you never know what you will find. Just make sure to freeze the items right away if you are not going to use them. Oh and I did add some gravy mix into the pot at the end.
